Honey Cajun Shrimp and Sausage Skewers

Skewer Ingredients:
- 1.5 lbs of Anchored Shrimp peeled & deveined
- 3 Spicy Sausage Links sliced
- 2 tbsp of Cajun Seasoning
- Finely Chopped Parsley for garnish
Honey Glaze:
- 2 oz of Bourbon or Whiskey
- 3 tbsp of Butter
- 1.5 tbsp of Honey
Add the shrimp into a food safe bowl. Season generously with the cajun seasoning and mix together. Place a sliced sausage link inside the curve of the shrimp and add onto the skewer. Do this until all your skewers are full. Set aside until you are ready to cook.
Prepare your chicken by trimming off any unnecessary fat. Lather with oil and season using some BBQ seasoning (I used my Hickory Peach Porter rub). Place in the fridge to set for 30 minutes.
Preheat your grill to medium high temperature (about 375F).
Add a basting skillet over the direct heat. Add bourbon to skillet and let simmer for 2-3 minutes. Once simmered, pull off to a lower heat part of the grill and add the rest of the Honey Glaze ingredients. Mix together thoroughly.
Add your shrimp skewers to the grill. Cook for about 1-2 minutes per side. Glaze the outside of the skewers on the last 1 minute of the cook to give a nice caramelization.
Once done, pull the skewers off and rest for 1-2 minutes. Garnish with chopped parsley and enjoy!
