Blue Cheese Crusted Steaks

These Blue Cheese Crusted Steaks are grilled to tender perfection, then finished off with a flavorful blue cheese crust and a quick sear.

Ingredients

Steak:

  • 3-4 Steaks of your Choosing ideally Ribeyes or NY Strips
  • Favorite Steak Seasoning used my Bourbon Prime
  • 1 tbsp Canola Oil

Blue Cheese Crust:

  • 1 cup Blue Cheese Crumbles
  • ¼ cup Panko Crumbs
  • ¼ cup Melted Butter unsalted
  • 1.5 tbsp Chopped Parsley
  • 1 tsp Hot Sauce

Instructions

  • Begin by mixing together all the ingredients for your Blue Cheese Crust. Try to get it to a peanut butter-like consistency. If it's too watery, then add more panko crumbs. If it's too dry, then add more melted butter. Set aside until ready to use.
  • Next, lather your steaks with oil and season using your favorite steak seasoning. I used my Bourbon Prime seasoning from Spiceology. Set those to the side until ready to use.
  • Preheat your grill/smoker/oven to about 300F for indirect cooking. Add some wood chips or wood chunks for some additional smoke flavor if you desire.
  • Add your steaks to the cool side of the grill and cook for about 30-45 minutes until they reach about 120F internal. (Note: If you are using a smoker, then make sure to flip your steaks halfway through so they cook evenly. If you are cooking in a wood fired oven, rotate your steaks around every 10 minutes and flip them halfway through to get an even cook.) Once the steaks are done, pull them off and let them rest for 10-12 minutes.
  • As the steaks rest, crank up the heat in your grill/oven to 500F+ in order to broil. Add a cast iron skillet over the heat with some oil and sear the steaks on the first side for 30 seconds to create a crust. Flip the steaks over and top them with a large dollop of the Blue Cheese Crust. Add back to the grill (ideally not over the direct heat) and let the crust broil until crispy and popping (another 1-2 minutes). When the crust is done, pull the steaks out of the skillet and set aside for 2 minutes to cool.
  • Slice, serve and enjoy!
