Honey Garlic Jalapeño Wings

Ingredients

Wings:

  • 2 lbs Chicken Wings
  • 2 tbsp Kosher Salt
  • 2 tbsp Black Pepper
  • 1.5 tbsp Garlic Powder
  • 1.5 tbsp Cornstarch

Honey Garlic Jalapeño Sauce:

  • 1 cup Honey
  • ¼ cup Beer lager
  • 2 tbsp Minced Garlic
  • 2 tbsp Diced Jalapeños
  • 2 tbsp Chopped Cilantro
  • 1.5 tbsp Clarified Butter
  • 2 medium Limes juiced

Sour Cream:

  • 2.5 tbsp Mayonnaise
  • 1.5 tbsp Sour Cream
  • 1 tsp Hot Sauce
  • 2 medium Limes juiced
  • Water to thin out

Garnish:

  • Chopped Cilantro
  • Chile Con Limon

Instructions

  • Begin by lathering your chicken wings in oil and mixing your salt, pepper and garlic with the corn starch. Season the wings thoroughly and set to the side. In a squeeze bottle, mix the ingredients for the sour cream and set to the side.
  • Preheat a grill to medium heat (around 350F) for two zone indirect cooking.
  • Add your chicken wings to the cool side of the grill and cook for about 45-60 minutes or until they reach 175F internal. Make sure to flip them as necessary to prevent burning. Once done, pull the wings off and keep warm.
  • Add a cast iron skillet to the grill. Add some clarified butter and your minced garlic brown for 2 minutes. Next, add your chopped jalapeno and cook for 1 minute. Deglaze with the beer and let simmer for 2-3 minutes. Finally, add the rest of the ingredients and let simmer over the heat, consistently stirring, until the sauce has thickened and caramelized (about 8-10 minutes). Watch your heat so that the sauce does not burn! If it does begin to burn, trash it and try again. Once the sauce is good, pull it off.
  • Add your chicken wings to a bowl and toss them in the sauce. Garnish the wings with sour cream, chopped cilantro and chile con limon. Serve and enjoy!
