Garlic Parmesan Wings

Garlic Parmesan Wings for a delicious chicken wing dinner.

  • 2 lbs Chicken Wings
  • 1.5 cups Big Bad BBQ Ale Rub Favorite BBQ Seasoning
  • 1 cup Yellow Mustard
  • 1 tbsp GLD Hot Sauce
  • 1 qt Frying Oil for frying
  • Chopped Chives for garnish
  • Buffalo Sauce for serving

Spicy Garlic Parmesan Sauce:

  • 1 cup Mayonnaise
  • 2.5 tbsp Minced Garlic
  • 2 tbsp Grated Parmesan
  • ½ tbsp Apple Cider Vinegar
  • 1.5 tsp GLD Hot Sauce
  • 1 tsp Red Chili Flakes
  • 1 tsp Chopped Chives
  • 1 tsp Lemon Juice


  • Slather your chicken wings in yellow mustard and GLD hot sauce then add your the Big Bad BBQ Ale Rub or your favorite bbq seasoning. Mix thoroughly. Set chicken aside until ready to use.
  • In a bowl, mix together all the ingredients for the Spicy Garlic Parmesan Sauce. Set to the side until ready.
  • Preheat your smoker to 250F for indirect cooking. Add some hickory wood chunks for added smoke flavor if desired.
  • Add your chicken wings to the smoker and cook for about 1.5-2 hours or until 165F internal.
  • As the wings are close to done, preheat a grill, fire pit or stovetop for direct cooking. Add a dutch oven to it and *carefully* add your frying oil (leaving at least 2-3” of space from the oil and the top of the skillet). Heat up the frying oil for 325-350F.
  • Once the wings are done, pull them off and let them rest for 2-3 minutes. Carefully add wings to frying oil and cook for 2 minutes. Flip and stir occasionally. Pull wings out of frying oil, pat dry with a paper towel and add to a tossing bowl.
  • Cover the wings in the Spicy Garlic Parmesan Sauce and toss thoroughly. Serve and garnish with Buffalo Sauce and chopped chives. Enjoy!
