Country Breakfast Skillet

Ring in the New Year with this classic American breakfast, a hot, over-the-fire griddle filled with sausage, bacon, eggs, potatoes, and pancakes. And in classic OTFC fashion, we also have a ribeye steak!

Ingredients

Skillet:

  • 4-5 Fresh Eggs
  • 3 cups Pancake Batter
  • 3 Large Golden Potatoes diced
  • 3-4 Ground Breakfast Sausage patties
  • 5-6 Bacon Strips
  • ½ tbsp Kosher Salt
  • ½ tbsp Black Pepper
  • ½ tbsp Garlic Powder
  • FYR GLD Hot Sauce
  • FYR RED Hot Sauce
  • Maple Syrup as needed
  • Cubed Butter as needed
  • Chopped Parsley for garnish

Instructions

  • Slather the steak with my FYR BLK Hot Sauce and season with my Smoked Garlic Jalapeno Lager Rub all over. Set to the side till ready to cook.
  • Next, mix your pancake batter and set it to the side.
  • If you're using ground breakfast sausage, form it into small patties.
  • Preheat the fire to a medium-high temperature of about 375 degrees F. Set the large cast iron griddle or skillet over the fire.
  • Add your bacon and sausage to cook in the skillet making sure to flip them every 45-60 seconds. When the bacon is crispy and the sausage is 165 degrees F internally (about 6-8 minutes), pull them off and keep warm.
  • Add your diced potatoes to the skillet and cook for about 20-25 minutes or until golden brown on the outside. During the last 5-7 minutes, add some of my FYR GLD Hot sauce, salt, pepper, and garlic powder. Cook until tender and crispy. Once done, pull off and keep warm.
  • Next, add your steak to the grill to cook until the internal temperature reaches 120 degrees F (about 5-6 minutes per side). Once the steaks are done cooking, pull them off and let them rest for 10 minutes.
  • Finally, pour your pancake batter into a hot skillet and cook in batches. Once done, pull off and keep warm.
  • When everything is done, add your potatoes back to the skillet. Spread the potatoes making a large ring in the skillet and add some butter to the center. Add your eggs into the middle and fry to preference. Add the rest of the cooked ingredients to the skillet for serving.
  • Remove the skillet off heat and let it rest for 1 minute. Serve the whole skillet topped with some chopped parsley and my FYR RED Hot Sauce. Don't forget to top your pancakes with butter and maple syrup. Enjoy!

Homemade Breakfast Sausage Recipe
This is a basic homemade breakfast sausage recipe, but feel free to get as adventurous as you like with the choice of meat and seasonings!
Combine 1 pound of ground pork with a teaspoon of kosher salt, half a teaspoon each of black pepper, dried sage, and dried thyme. Add a quarter teaspoon each of crushed red pepper flakes (for a touch of heat), garlic powder, onion powder, paprika, and fennel seeds (optional but adds great flavor). Thoroughly mix the ingredients and then form into patties.
