Double Fried Chicken Wings

Ingredients

Chicken Wings:

  • 2 lbs of Chicken Wings
  • 1 cup Favorite BBQ Rub
  • Canola Oil as needed
  • 1 qt Frying Oil peanut or vegetable

Buffalo BBQ Sauce:

Instructions

  • Lather your chicken wings in oil. In a bowl, season the chicken thoroughly with your favorite bbq rub. Set chicken in the fridge for 30 minutes.
  • Preheat your grill to 250 degrees F for a 2-zone indirect cooking. Add some wood chips for added smoke flavor, if desired.
  • Add your chicken wings to the smoker and cook for about 2-2.5 hours or until an internal temperature of 165 degrees F is reached. Once the wings are done, pull them off and keep warm.
  • Next, kick up the heat in your grill to 400 degrees F. Add a Dutch oven to it and add your frying oil heating up to 350 degrees F.
  • Very carefully add wings to frying oil (cooking in batches as needed) and cook for 2-3 minutes. Flip and stir occasionally.
  • After they have fried for the first time, pull them off and add them to a large bowl. Add about ½ cup of Primal Kitchen Buffalo Sauce and ½ cup of Primal Kitchen BBQ Sauce and toss.
  • Next, add the tossed wings back to the frying oil at the same temperature and fry for another 2-3 minutes (cooking in batches as needed).
  • Once fried, toss them again in more BBQ and buffalo sauce.
  • When the wings are done, place them on a plate with ranch or blue cheese. Serve and enjoy!

Homemade Blue Cheese Dressing
Creating homemade blue cheese dressing is as easy as it is satisfying. In a bowl, whisk together 1 cup of Primal Kitchen mayonnaise, 1/2 cup of sour cream, and 1/2 cup of buttermilk. Add 4 ounces of crumbled blue cheese, 1 tablespoon of white wine vinegar (or apple cider vinegar), 1 teaspoon of Primal Kitchen Organic Dijon mustard, and some minced garlic. 
Gently fold in the blue cheese, leaving some larger chunks for texture, and season with salt and black pepper to taste. Refrigerate the dressing for at least 30 minutes to enhance the flavors. Finally, give it a quick stir before serving with the chicken wings.
