Steamed Mussels in Beer

Lightly steamed mussels in a delicious mix of beer and other fun stuff all cooked over some hot Cowboy Charcoals!

Ingredients

  • 2 lbs of mussels cleaned, bearded & closed (if the shell is open then they are dead)
  • 2 tbsp of canola oil
  • 3 tbsp of butter
  • 3 cloves of garlic minced
  • 1 lemon juiced
  • 12 oz of beer ale, ipa or belgian style
  • Salt & pepper to taste
  • ¼ cup of green onions chopped
  • Chopped parsley garnish
  • French baguette for juice

Instructions

  • Use some Cowboy Southern Style Hardwood Lump Charcoal to light fire and let burn for 10-15 minutes. Once Charcoal is white hot, push into one pile for direct grilling.
  • Place cast iron skillet over fire 2-3 minutes before cooking to preheat.
  • First, add some canola oil and butter. Once butter has melted, add garlic, lemon juice, beer, salt and pepper. Stir and let simmer for 1 minute. Finally, add mussels and top with green onions. Let simmer until all the shells have fully opened (about 10-15 minutes).
  • Pull skillet of charcoals, garnish with parsley, and enjoy!

Notes

Equipment: Cowboy Charcoal, Cast Iron Skillet, and Tongs.
