Grilled Scallops in the Shell

Prep the Scallops

Pre-Preparation

We were lucky enough to find some fresh scallop shells at a local market which inspired this epic recipe!  To prep the scallops, tap them dry with a paper towel, spritz with lemon and sprinkle on the seafood seasoning. Allow the scallops to marinate in the fridge 10 minutes while the grill heats. 

Step 1

Make the herb butter

While the grill preps and the scallops marinate, whip up the melted butter.  Mix the butter, parsley, chives, garlic, horseradish, chili flakes, and hot sauce together in a bowl.

Step 2

Prep the grill

Prep the grill for direct heat.  Place each scallop in a shall. Carefully place the shells over the coals.

Step 3

Grill the Scallops

Using tongs, gently flip the scallops in the shells once, after about 1.5 minutes cooking.  Add a drizzle of the Horseradish Herb Butter.

Step 4

Simmer in butter

Let the scallops simmer in the herb butter until cooked through, about another 1 to 1.5 minutes longer.  Meanwhile, char some lemons for serving. 

Step 5

Serve

Plate the scallops with a little more of the Horseradish Herb Butter over top.  Serve & enjoy!
