Steaks with Gorgonzola Mushroom Cream Sauce

A Perfect Sauce for Beef

Probably our most requested recipe, this creamy sauce is the perfect accompaniment to hearty steaks. Paired with NY Strips, as contributor Brad has done for OTFC or add to filet, quick thin t-bones, or slices of prime rib. 

Step 1

Season the Steaks

Rub the steaks generously with Bourbon Prime and preheat your grill for direct cooking.

Step 2

Sear the Steaks

Preheat the skillet and add the oil to coat. Cook the steaks for about 4 minutes until a nice crust forms.

Step 3

Baste in Butter

Flip the steaks and add the butter, garlic and thyme.  Using a heatproof glove, tilt the skillet and baste the steaks as they continue to cook.

Step 4

Rest

Remove the steaks from the skillet once they reach your desired temp and allow them to rest while you make the sauce.

Step 5

Cook down the Mushrooms

Back over the heat, add the sliced mushrooms to the pan.  Allow them to cook until the liquid has cooked out of them and is evaporating, about 5 minutes. Add Worcestershire and minced garlic.

Step 4

Make the Sauce

Finally add in the heavy cream and gorgonzola crumbles. Stir to melt evenly and allow to simmer until thickened to your desired consistency. 

Step 4

Serve

Slice the steaks and drizzle with the gorgonzola mushroom sauce.  Serve and enjoy!
