Buffalo Chicken Quesadilla

  • 5-6 Boneless & Skinless Chicken Thighs
  • 3 tbsp Favorite BBQ Seasoning
  • Canola Oil as needed


  • 3-4 cups Shredded Cheddar Cheese
  • 2-3 cups Monterey Jack Cheese
  • 1 cup Chopped Scallions
  • 1 cup Diced Red Onions
  • ½ cup Crumbled Blue Cheese
  • 8-10 Large Tortillas
  • Primal Kitchen Buffalo Sauce as needed

Buffalo Ranch:

  • ½ cup Primal Kitchen Buffalo Mayonnaise
  • 3 tbsp Sour Cream
  • 2 tbsp Primal Kitchen Buffalo Sauce
  • Buttermilk to desired consistency
  • Salt to taste


  • Begin by adding canola oil to chicken and generously seasoning with your favorite bbq seasoning. Set to the side until ready to use.
  • Next, mix together all the ingredients for the Buffalo Ranch in a bowl. Add as much buttermilk as you desire to get the right flavor and consistency.
  • Set to the side until ready to server
  • Preheat a medium high heat grill for direct cooking (about 350F).
  • Add your chicken to the grill and cook for about 7-9 minutes per side or until they have reached 170F internal.
  • Once the chicken is done cooking, pull it off and let it rest for 5 minutes.
  • Once rested, chopped the chicken up into small cubes and set to the side.
  • Clean off your grill grate and either add a large plancha or a large cast iron skillet. Let it heat up over the flames for 2-3 minutes (without any oil).
  • Add your large flour tortilla down and spread out a handful of shredded cheddar cheese and jack cheese on one half of the tortilla.
  • Add a handful of chopped chicken over the cheese then add more cheese, blue cheese crumbles, diced red onions, sliced scallions and a drizzle of Primal Kitchen Buffalo Sauce.
  • Fold the empty half of the tortilla over to make your quesadilla. Let this cook, flipping every minute, until the tortilla is crispy and the cheese has melted (about 3-4 minutes of cooking).
  • Repeat all these steps until you have done all the quesadillas you like. Once done, pull off and let cool.
  • Slice your quesadilla up and serve with the Buffalo Ranch. Enjoy!
