Then, we made a cheesy, chicken-filled quesadilla on the skillet, making sure the tortilla was nice and crispy. My secret ingredient? A homemade buttermilk ranch including Primal Kitchen’s Buffalo Sauce and Buffalo Mayonnaise– to kick up the spice level with a flavor that will keep you coming back for more.

Buffalo Chicken Quesadilla Ingredients

To start off this finger-licking buffalo chicken quesadilla, you’ll make yourself some spicy chicken out of boneless, skinless chicken thighs seasoned with your favorite BBQ seasoning.

Then, you’ll need some shredded cheddar cheese, monterey jack cheese, chopped green onions, diced red onions, crumbled blue cheese, large tortillas, and Primal Kitchen Buffalo Sauce.

How to Make Buffalo Chicken Quesadillas

Begin by adding canola oil to chicken, generously seasoning it with your favorite BBQ seasoning. Then, set to the side until ready to use.

Next, mix together all the ingredients for the Buffalo Ranch in a bowl. Add as much buttermilk as you desire to get the right flavor and consistency. Set to the side until ready to serve.

Preheat a medium-high heat grill for direct cooking (about 350F).

Add your chicken to the grill and cook for about 7-9 minutes per side or until they have reached 170F internal. Once the chicken is done cooking, pull it off and let it rest for 5 minutes. Once rested, chopped the cooked chicken up into small cubes and set to the side.

Clean off your grill grate and either add a large plancha or a large cast iron skillet. Let it heat up over the flames for 2-3 minutes (without any oil). Now, let’s assemble these buffalo chicken quesadillas!

Add your large flour tortilla down and spread out a handful of shredded cheddar cheese and jack cheese on the top of one half of the tortilla. Add a handful of chopped chicken over the cheese then add more cheese, blue cheese crumbles, diced red onion, sliced scallions and a drizzle of Primal Kitchen Buffalo Sauce. Fold the empty half of the tortilla over to make your quesadilla. 

Let this cook, flipping every minute, until the tortilla is golden brown and crispy and the cheese has melted (about 3-4 minutes of cooking). Repeat all these steps until you have done all the quesadillas you like. Once done, pull off and let cool.

Grab your cutting board, slice your cheesy quesadillas up with a pizza cutter, and serve with the Buffalo Ranch. Enjoy!

Tips and Tricks

To get the best flavor in your chicken thighs, cook them until they reach 170F, then pull them off. We’re looking for that tender, smokey BBQ vibe, then mixing it with gooey cheese and mouth-watering hot sauce.

When you’re making the quesadilla, make sure the skillet is hot but dry (no oil) so that the tortilla gets crispy and not soggy. 

Finally, add more cheese and chicken than you might think! They shrink when cooked, so you want to make sure you have a hearty amount.

How to Store Leftovers & Reheat

Store any leftovers in an airtight container for up to 3 days and reheat in a skillet. No rubbery microwaved quesadillas are welcome in these parts!

How to Avoid a Wet Quesadilla

If you add any wet ingredients like peppers, beans, or other vegetables, they can make your quesadilla floppy instead of crispy. You will want to pat the moisture out of your vegetables with a paper towel before adding them to the quesadilla to end up with crisp tortillas.
