Steak:
- 3 Filet Mignons
- 1.5 tbsp Kosher Salt
- 1.5 tbsp Black Pepper
- 1.5 tbsp Garlic Powder
- Canola Oil as needed
Lobster Mac & Cheese:
- 1 lb Macaroni Noodles cooked
- 6-8 oz Cooked Lobster Meat
- 2.5 cups Whole Milk
- ⅓ cup Unsalted Butter
- ⅓ cup All Purpose Flour
- 2.5 tbsp Minced Garlic
- 1.5 tbsp Dijon Mustard
- 1.5 tbsp White Wine
- 1 tbsp Seafood Seasoning
- 2.5 cups Shredded Cheddar Cheese
- 1.5 cups Shredded Gouda Cheese
- Chopped Parsley as garnish
Lobster Mac & Cheese:
Preheat a medium high heat grill for direct cooking (about 325F).
Carefully preheat a skillet/dutch oven over the hot fire.
Add a little oil and saute your minced garlic for 2-3 minutes.
Once browned, deglaze with white wine and stir in the butter, dijon mustard, seafood seasoning and flour.
Once the flour mixture is mixed and starting to bubble, add ½ of the milk and whisk together.
Once the mixture has thickened, add the cheese (save ⅓ cup for garnish) and begin stirring.
Finally, add the leftover milk until you have reached your desired consistency for the cheese.
Once ready, fold into the cheese the cooked macaroni noodles and the lobster meat.
Pull the skillet off the heat and keep warm.
Steak:
Begin by adding oil to your steaks and generously seasoning with salt, pepper and garlic powder.
Preheat a high heat grill for direct cooking (about 400F).
Add the steaks to the grill to cook for 4-5 minutes per side or until they are 120F.
Once done, pull off and let rest for 10-15 minutes.
Serve with a heaping amount of mac and cheese on top then melt some cheese.
Garnish with parsley and enjoy!
