Healthy Steak Bowl

With juicy steak, sweet potatoes and honey chipotle sauce, this healthy steak bowl is a freakin' delicious regular in my dinner rotation.

Ingredients

Steak:

Honey Chipotle Sauce:

  • 1 cup Greek Yogurt
  • 2 medium Limes juiced
  • 2 tbsp Chipotle Puree blended chipotle in adobo
  • 2 tsp Local Honey
  • Salt & Pepper to taste

Garnish:

  • 1 Baked Sweet Potato
  • 2-3 Fried Eggs
  • Sliced Avocado
  • Everything Bagel Seasoning
  • Pickled Red Onions Optional

Instructions

Sweet Potato:

  • In an oven or air fryer, heat to 350F.
  • Lightly oil the outside of the sweet potato and poke holes in it with a fork. Add to a foil pan into the oven to bake for 60-70 minutes until fully softened.
  • Pull out once done and keep warm

Steak Bowl:

  • Slather the steak in oil and generously season with my Cowboy Butter rub.
  • Add to a medium high heat fire (about 350F) for 6-8 minutes per minute until 120F internal. Once done, pull off and let rest for 5 minutes.
  • In a bowl, mix together all the ingredients for the Honey Chipotle Sauce and set to the side.
  • Add the cooked sweet potato to the center of a bowl. Slice the steak and place on top along with fried eggs, avocado, everything bagel seasoning and pickled red onions.
  • Drizzle the Honey Chipotle Sauce over the top, serve and enjoy!

Notes

The Mighty Sweet Potato
​Sweet potatoes have a ton going for them on the nutrition front. Just in case the flavor alone wasn't enough for you, here are a few other points in their favor:
