  • 1 lbs of Anchor Shrimp
  • Sesame Seeds for garnish
  • Scallions for garnish
  • Oil
Spicy Seasoning:
  • 1.5 tbsp of Ancho Chile Powder
  • 1 tbsp of Cumin
  • 2 tsp of Garlic Powder
  • 1 tsp of Onion Powder
  • 1 tsp of Black Pepper
  • 1 tsp of Cayenne Powder
  • 1 tsp of Cinnamon
  • 1 tsp of Sea Salt
Pineapple Aioli
  • ¼ cup of Mayonnaise
  • ¼ cup of Pineapple cubed
  • ¼ cup of Cilantro
  • 4 Garlic Cloves
  • ½ Jalapeno sliced
  • 2 Limes juiced
  1. Combine ingredients for spicy seasoning and mix with Anchored Shrimp. Place in the fridge for 15 minutes.

  2. Add to a blender pineapple, cilantro, garlic cloves, jalapeno, and lime juice. Blend until smooth and combine with mayonnaise. Add to the fridge until shrimp are done.
  3. Using lump charcoal, light and preheat for 15 minutes. Pour coals into the grill and place into one pile for direct cooking. Once you have a medium high heat (about 350F), add skillet with oil to preheat 2-3 minutes before cooking.
  4. Add shrimp to skillet and cook until they start to look “C” shaped or about 3-4 minutes. Once done, pull off and place on a plate.
  5. Top cooked shrimp with sesame seeds, scallions and drizzle with Pineapple Aioli. Enjoy!
