  • 1 prime rib 4-5 bones and around 8lbs
  • 1/2 cup of fresh thyme
  • 1/2 cup of fresh rosemary
  • 1/4 cup of olive oil
  • 3 tbsp of cinnamon
  • 4 garlic cloves minced
  • Salt and pepper to taste
  1. When prime rib is at room temperature, lather with olive oil then season with minced garlic, fresh thyme, fresh rosemary, cinnamon, salt and pepper.
  2. Using some charcoal, light fire in Weber Grill and let burn for 15-20 minutes. Once charcoal is white hot, make a crescent moon shape on one side of the grill for indirect grilling. OPTIONAL: Add some hickory or mesquite wood chunks to the top of the charcoal for added flavor.
  3. Place prime rib on the opposite side of the charcoal for indirect grilling. Insert Weber iGrill into the side of the roast (fully submersed and not touching bone) and setup for a "prime rib, bone-in".
  4. Close lid and let prime rib cook for about 3-3.5 hours on 250-275F or until internal temperature is 130F (medium-rare). Make sure to rotate every hour in order to cook evenly. Note: Add charcoal & wood chunks when needed.
  5. Once the Weber iGrill reads 130F, place rib roast over hot coals for 1 minute in order to get a good sear.
  6. After searing, pull off and let rest for 30 minutes.
  7. Serve & enjoy the holidays with your family!
