Stone Ground Mustard

Filet the Tenderloin
Filet the tenderloin, unrolling as you go, to about 1/4" thick, creating a large flat surface. Line with the mustard, provolone cheese, and sliced prosciutto before rolling back up.
Grill the Pinwheels
Skewer and slice the tenderloin before placing it over a preheated grill set up for direct heat.
Flip and Cook to Temp.
Cook the steaks to around 120F, flipping once as needed to ensure even cooking.
Add the Gremolata
Top with the Spicy Gremolata right before the steaks finish on the grill. Allow the steaks to rest 5 minutes before serving.
Garnish and Serve
Garnish with Spicy Gremolata if desired. Slice and enjoy!
