Prep the Chicken

Pre-Preparation

While a skillet pre-heats with the frying oil, cube the chicken thighs and toss them into a bowl of the cornstarch mixed with the Sweet Teriyaki Sake rub to coat evenly.

Step 1

Fry

Preheat the frying oil to 375 and, working in batches and with caution, fry the chicken 3 or so minutes until it reaches an internal temperature of 165F.  Remove with a slotted spoon and set on a paper towel to drain excess oil.

Step 2

Make the Sauce

Once the chicken is done, clean out the skillet and add it back to heat to make the sauce.  Whisk together the ingredients for the Orange Chili Sauce and let it thicken, abut 5 minutes before adding in the water and cornstarch mix.

Step 3

Coat the Chicken

Working quickly, and with heat proof gloves, add the fried chicken into the sauce, tossing to coat the chicken evenly with the Orange Chili Sauce.

Step 4

Remove from Heat

Once the chicken has coated, carefully remove the skillet or wok from the heat.

Step 4

Serve

Garnish with scallions and sesame seeds.  Serve & enjoy!
