Prep the Steaks

Cube the steaks into even 1.5" cubes and skewer them onto grilling skewers as shown in my recipe here, or onto kabob skewers for individual portions. For presentation, we like to serve these and many of our recipes on large skewers inspired by churrasco grilling from South America. 

Step 1

Prep the Grill

Prep your grill to a medium high heat, around 375, set up for a 3 zone cooking fire. This set up features the Oklahoma Joes Blackjack Kettle Grill.

Step 2

Set up the Basting Skillet

Once the grill is set up, before adding the meat, set up a cast iron skillet over the heat and allow the beef tallow melt until clean and add in the garlic and habanero sauce.

Step 3

Grill & Baste

Next, grill the meat in between the two hot zones, with the lid closed about 15-20 minutes, rotating once as the meat cooks and chars.  Finally baste the beef with your herb brush dipped in the beef tallow mix evenly on all sides of the meat.

Step 4

Garnish and Serve

Finish by tossing the herb brush to the coals and closing the lid to lock in the fragrance before pulling the meat from the grill and resting for 5 minutes before slicing.  Serve and enjoy!
