Maple Cajun Salmon Pinwheels

This recipe is next level with salmon filled and rolled with a cream cheese blend, maple glaze and bacon bits all cooked in cast iron.  If you're looking for a new seafood recipe, this is it.

Prep the Salmon

Lay the salmon out and trim as needed.  Lather in oil and season both sides with your favorite Cajun seasoning. Mix the cream cheese and other filling ingredients together and spread evenly over one side of the salmon. Gently, roll the salmon up, from the tail end (more narrow end) to the top creating a pinwheel. Wrap in plastic wrap and set in fridge for 30 minutes.

Step 1

Prep the Grill

Prep your grill or smoker for indirect heat, around 275. Add wood chunks or chips for added smoked flavor.  Meanwhile, slice the salmon to create the pinwheels.

Step 2

Smoke the Salmon

Place the salmon in a large cast iron pan and allow to come to room temperature, 7 to 8 minutes.  Place on the smoker and cook until the salmon reaches 135 - 140F.

Step 3

Glaze

Whisk the glaze ingredients and brush the salmon with the maple glaze during the last 10 minutes of cook time to set.

Step 4

Garnish and Serve

Remove the salmon from the grill, rest for 5 minutes.  Serve and enjoy!
