Prep the Shirmp
In a large bowl, toss the shrimp, chipotle puree, garlic, salt, pepper, lime juice and oil. Allow to marinate for 15 minutes while prepping the grill or griddle. For this recipe, we use a plancha; designed for high heat over our fire. It concentrates high heat in the center of the grill space.
Prep the grill
Preheat a fire for direct heat, placing a griddle or large cast iron pan over top to preheat as well.
Grill the shrimp
Place the shrimp onto the cooking surface. They will cook quickly, 1 1/2 to 2 minutes a side so do not leave them.
Remove from heat
Working quickly, make sure all the shrimp are cooked through and remove them from the grill.
Garnish and Serve
Garnish the shrimp with crema, cotija, cilantro, lime wedges and a dusting of Smoked Chipotle Mezcal.
