In the end, this simple yet delicious style of cooking only takes two ingredients: a big juicy steak and a hot bed of Cowboy® Hardwood Lump Charcoals.

What does dirty steak and cooking on the coals mean?

 

To start, cooking on the coals is not that uncommon! In fact, there are tons of food you can cook on the coals including dirty steak and bread

 

 

This method of cooking can be used for any thick protein from whole fish to pork chops. The key is really around how to cook on the coals. I love cooking steak because it is super easy to get an amazing crust. There are a few others though like lobster tails which are delicious cooked on the coals.

What about the coals getting on the steak?

 

Your first big hurdle is making sure the coals are while hot! You need them to be white instead of black in order to be ready to cook your dirty steak. A big fear for most people is that the coals will stick.

This is not going to happen as the steak will create a crust way before the coals lodge themselves into the meat. If there are any coals on the steak, just easily brush them off and great ready to eat.

 

In the end, this is high quality way to make steak in the great outdoors. Plus, you don’t need any equipment to make it happen. So take that grill grate off and get your Cowboy® Hardwood Lump Charcoals going because it’s time to make some dirty steak!

Smoky & Sweet Dirty Steak

Smoky and sweet steak cooked right on the coals. You need to try it!

Ingredients 

  • 2 Ribeye Steaks at room temperature about 8-10 oz each
  • ¼ cup kosher salt
  • ¼ cup fresh black pepper
  • 1 ½ tbsp cinnamon optional

Instructions 

  • Light Cowboy® Hardwood Lump Charcoals in charcoal chimney and let burn for 10-15 minutes
  • Spread hot coals over grilling area and preheat grill for approximately 10 minutes
  • While preheating the coals, liberally season the steaks with salt and pepper on both sides. If you want to be more adventurous, season with cinnamon to create smoky & sweet flavor.
  • Once coals are covered in white ash, use tongs to place steaks on top of the coals.
  • For Rare (125F): Let the steaks cook for 3 minutes the first side, and then flip to the other side for another 2 minutes. For Medium Rare (135F): Let the steaks cook for 3 minutes the first side, and then flip to the other side for another 3 minutes. For Medium (140F): Let the steaks cook for 4 minutes the first side, and then flip to the other side for another 3 minutes
  • Take steaks off the coals, brush off any ash, and let rest for 10 minutes. Enjoy!
