Beer Glazed Scallops

 

Cooked in cast iron right on top of some hot Cowboy Charcoal, this dish will be your new favorite. It is seasoned with a lot of flavor and then lightly glazed inside the skillet with the beer of your choosing!

Tip to Make Great Beer Glazed Scallops

 

The key to making this delicious seafood dish is have the the right gear and ingredients. I prefer to get some fresh scallops from a local seafood vendor. If you live far away from the ocean, then do not worry!

 

You can still find great scallops from national groceries like Whole Foods or Fresh Market. Another key is using the right beer! I would avoid using an ale or any type of bitter beer. Bitter seafood is not necessarily the type of flavor we are going for in the Beer Glazed Scallops.

On the other hand, cheap beer does not pack a deep enough punch in flavor either. I would shoot for a local lager, golden ale or pilsner. This will provide clean, fresh and easy to eat flavor (or drink haha).

 

Lastly, make sure to have great charcoal & cast iron for your Beer Glazed Scallops. I prefer to use Cowboy Charcoal. It is easy to light, high heat and consistent. Definitely a win in the cooking category. Plus, a medium size skillet is all you will really need for cooking.

Beer Glazed Scallops

Beer and seafood just go together. Just like these Beer Glazed Scallops.

Ingredients 

  • 10-15 fresh scallops
  • 2 tbsp of olive oil
  • 2 tbsp of butter
  • 1 tbsp of lemon juice
  • 1 tbsp of paprika
  • 1 tbsp of minced garlic
  • 1 tbsp of bacon finely cut
  • 1/4 cup of parsley finely chopped
  • 1/3 of your favorite 12oz beer preferably a lager
  • Salt & Pepper

Instructions 

  • Using some Cowboy Hardwood Lump Charcoal, light fire and let burn for 15-20 minutes. Once charcoal is white hot, evenly disperse around grill.
  • About 10-15 minutes before cooking, place a cast iron skillet on top of charcoal to preheat.
  • Season scallops with olive oil, lemon juice, paprika, salt & pepper.
  • Add butter, minced garlic and bacon to cast iron 2 minutes before cooking scallops.
  • Place scallops in skillet and let cook for 2 minutes on the first side. Flip scallops and pour in beer. Let simmer in beer for another 2 minutes.
  • Sprinkle parsley on top, serve and enjoy!
