I went to a festival in the town of Medora, North Dakota on a gorgeous day and was intrigued to see they were cooking steak on a pitchfork! Their nationally acclaimed pitchfork steak fondue was such a cool experience that today I’m bringing it to you. You guys know I love unique dining experiences, and this is part 2 of my series on unique ways to cook steak over fire and if they are worth it.
This recipe required me to break from my norm and use a gas powered turkey fryer. I know, I know… I’m a fire cooking guy. However, I’m also an “exercise common sense” guy and this amount of frying oil over flickering flames did not seem worth the risk. Alas, I reluctantly (but wisely) reached for the gas powered turkey fryer.
Overall, the frying really made the flavor amazing and the steaks had an insane crust. I skewered some NY Strips on a food safe pitchfork (*read below) and submerged them in oil. It was really hard to get them to a perfect medium rare without parts being more rare or overdone. This Western style recipe is definitely worth making though!

Why You’ll Love Pitchfork Steak Fondue
Honestly, it’s a great food if you like to use showmanship in your cooking, and the flavor was pretty amazing. You do get holes in the steaks and it’s kind of hard to get a perfect medium rare, but overall the deep fried steak blew me away.
This recipe includes baked beans and baked potatoes on the side, but you could make your own sides if you wanted, like garlic toast, homemade potato chips, or fresh fruit. You could even have a potluck where all the sides are served buffet style!

Surprisingly, the prep for this perfect dinner takes only 10 minutes of prep time and 20 minutes of cook time to serve 4!

How to Cook Steak on a Pitchfork
The Prep

Make sure to use a stainless pitchfork (DO NOT USE GALVANIZED), then clean with a wire brush or power sander, disinfect, and season with cooking oil. Using a food grade 304 stainless steel pitchfork is the most ideal. Be careful with frying in oil and make this recipe AT YOUR OWN RISK!
Okay, let’s start this Pitchfork Steak Fondue cowboy cookout. Begin by heating a deep dish turkey fryer with oil to 350F.
Next, set your steaks out for 30 minutes to come to room temperature. Generously season your steaks with kosher salt, then skewer them on to your food safe pitchfork making sure to keep some room between each steak to develop a crust.
The Frying
After your steaks are seasoned and skewered, add your pitchfork with the steaks to the frying oil making sure the steaks are fully submerged.
Here are some cooking time estimates for Pitchfork Steak Fondue, but remember it’s also dependent on how thick your steaks are. For rare, cook for 4-5 minutes. For medium-rare, cook for 5-6 minutes. Cook 6-7 minutes for Medium. And for medium-well/well done, cook for 7-9 minutes. Next, pull them off the pitchfork and let them rest for 10 minutes.
Finally, serve your pitchfork steaks with baked potatoes, baked beans, and some adult beverages. Enjoy!
