Let me introduce you to a simple, low-cost meal you can make any night of the week, Roast Beef and Cheddar Sliders. I layered roast beef and melty cheese on a fluffy bun, smoked it all to perfection, and then topped it off with my favorite horsey sauce. These simple sliders are great for family gatherings, a game day party or an easy dinner.

If you want, you can choose to stop after roasting your roast beef, but I decided to make them into sliders! There’s something about savory roast beef covered and melty cheese on a toasted bun.

Why You’ll Love Roast Beef and Cheddar Sliders

If you did not know, making roast beef is super easy. It is just taking a whole beef roast (rump, sirloin, or round) and cooking it low and slow until beautiful on the outside but medium-rare in the middle.

I amped up the roast beef by injecting it with beef tallow, slicing it, and turning into some Roast Beef and Cheddar Sliders. Easy, simple, and so freakin delicious! 

You don’t have to use beef tallow for this recipe, but I like to because it adds a little more fat to the roast. These cheddar roast beef sliders are so easy to toss together and even easier to eat. They are like mini flavor bomb sandwiches.

How to Make Roast Beef Sliders Recipe 

Roast Beef and Cheddar Sliders Ingredients

Roast Beef:

  • Beef Roast, sirloin, round or rump 
  • Mesquite Peppercorn Lager Seasoning
  • Beef Tallow

Sliders:

  • Slider Rolls
  • Cheddar Cheese Slices
  • Your Favorite BBQ Sauce

Butter:

  • Unsalted Butter
  • Everything Bagel Seasoning

Horsey Sauce:

  • Mayonnaise
  • Prepared Horseradish
  • Champagne Vinegar
  • White Sugar
  • Kosher Salt

Let’s Get Cooking

Prep the Smoker

Begin by preheating the smoker to medium-low heat (about 250F) for indirect cooking.

Prep Your Roast Beef

Using a food-safe injector, inject your beef roast with the beef tallow all over. Then, lather the outside of the roast with the extra tallow. Next, generously season with my Mesquite Peppercorn Lager seasoning.

Place the roast on the smoker and let it cook indirectly until it reaches 120F internal (about 30 minutes). Once the roast is done, pull it off and let it rest for 20 minutes.

When the roast is done resting, slice it into really thin slices. Set the sliced roast beef to the side.

Construct Your Delicious Sliders

While keeping the slider rolls together, slice your Sliders Rolls in half, so there is a top side and bottom side. Add the bottom side into a foil bin or cooking-safe skillet.

Add a layer of BBQ Sauce, then add slices of cheddar cheese, followed by quite a bit of sliced roast beef, more barbecue sauce, more sliced cheese and then the top of the slider buns.

In a small bowl, melt some butter. Gently spread the melted butter over the tops of the rolls (I did this with a small basting brush), then top with some Everything Bagel seasoning.

Smoke Your Sliders

Get your smoker to medium heat (around 300-325F) for indirect cooking. Add your sliders (still  in the foil bin) onto the smoker to cook until they are golden brown & crispy (about 10-12 minutes).

Once done, pull the sliders off and let them cool for 2-3 minutes.

Mix all the ingredients for the Horsey Sauce in a separate bowl and then set to the side. Slice up your sliders, serve with the Horsey Sauce and enjoy!

What to Serve with Roast Beef Sliders

These delicious roast beef sandwiches are very versital, so you can pair them with almost any side. They pair well with french fries, potato salad, roasted veggies, salads, and more. You can also serve them as a hand-held snack for Super Bowl Sunday or the main course, whatever you like!

Storage

If you end up with leftovers you should store your roast beef and buns separately so that the sandwiches don’t get soggy. Store your roast beef in an airtight container for up to 3-5 days, and keep the buns in a Ziploc bag for up to 5 days.

Reheating/ Leftovers

To reheat your leftovers, toss your buns into a toaster oven, arrange your roast beef on a baking sheet, and place it in the oven at 350 until warm.

What cheese pairs well with roast beef?

Many different cheeses go well with roast beef. I like the combination of cheddar with roast beef, but you can also use gouda, blue cheese, asiago, or fontina.

Roast Beef:

Sliders:

  • 1 pack Slider Rolls
  • 12-14 Cheddar Cheese Slices
  • 1 cup BBQ Sauce

Butter:

  • ¼ cup Mayonnaise
  • 1.5 tbsp Prepared Horseradish
  • 1.5 tbsp Champagne Vinegar
  • 1.5 tsp White Sugar
  • Kosher Salt to taste

Instructions

  • Get your smoker to a medium heat (around 300-325F) for indirect cooking. Add your sliders in the foil bin on to the smoker to cook until they are golden brown & crispy (about 10-12 minutes). Once done, pull the sliders off and let cool for 2-3 minutes.
  • In a separate bowl, mix together all the ingredients for the Horsey Sauce and set to the side.
  • Slice up your sliders, serve with the Horsey Sauce and enjoy!
