  • Steak – Filets or NY Strips are coated in FYR BLK Hot Sauce and my new Cowboy Butter Rub.
  • Marry Me Sauce – Fresh sour cream, mayonnaise, white onion, sun-dried tomatoes, parmesan cheese, parsley, red chili flakes, garlic, fresh basil, lemon, black pepper, and salt are blended to a semi-rough consistency.
  • Crispy Shallots – We’ll fry thinly sliced shallots to a crispy, golden-brown perfection.
  • Sliders – Soft rolls, mozzarella cheese, and melted butter help finish things.
You can see how the creamy sauce is thick but not totally smooth.

How to Make Marry Me Steak Sliders

Whether for a special occasion or just a fun night at home, these Marry Me Steak Sliders are your ticket to grilling greatness. So, let’s get prepping and cooking our little masterpieces! 

Start with the Sauce

Toss all the fresh ingredients for the Marry Me Sauce in a blender before adding a pinch of black pepper and kosher salt to taste. Blend until it’s roughly chopped but still thick. This isn’t an Alfredo pasta sauce—it’s a thick sauce with bits of sun-dried tomato and parsley that adds vibrance to every bite.

The key to this recipe is the creamy Marry Me Sauce with sun-dried tomatoes, parmesan, and garlic.

Prep the Steak Sliders

Let’s coat those steaks to get the perfect sear. Season them with neutral oil, some FYR BLK Hot Sauce, and a generous layer of my Cowboy Butter Rub.

Grilling Time

Next, preheat your grill to medium-high heat (around 400F). When the temperature is fully reached, sear the steaks for about 3-4 minutes per side. For best results, pull them at 120F for medium-rare. Let the steaks rest on a large cutting board, then slice them into bite-sized cubes.

The NY Strips or filets are grilled to perfection on the FYR Grill with some Cowboy Charcoal keeping the flames steady.

Get Those Shallots Crispy

Heat a skillet over medium heat with canola oil until it reaches 350F. Toss in thinly sliced shallots and fry until golden brown, about 3-4 minutes. Set them on a paper towel to cool and crisp up.

Assemble the Sliders

Keep your slider rolls intact and slice them horizontally. Lay the bottoms in a foil pan or skillet. Layer on mozzarella cheese, steak slices, Marry Me Sauce, crispy shallots, and more cheese before topping with the top side of the buns. Brush the tops with melted butter for extra shine and crunch.

The steak is slathered with the cream sauce after being layered over the toasty buns.

Cook to Perfection

Place the sliders in your grill over indirect heat at 350-375F. Let them cook for 10-12 minutes until the tops are golden brown and the cheese is gooey. If you have another foil pan, or lid of sorts, you can put that over the sliders and add a coal on top. This will help the top of the buns to crisp up a bit.

Then, pull them off, let them cool slightly. Now slice and serve. Enjoy!

Ingredients 

Steak:

Marry Me Sauce:

  • 1.5 cup Sour Cream
  • ½ cup Mayonnaise
  • ¼ White Onion
  • ¼ cup Sun Dried Tomatoes
  • ¼ cup Parmesan Cheese
  • 2 tbsp Italian Parsley
  • 1 tbsp Red Chili Flakes
  • 3-4 Garlic Cloves
  • 4-5 Basil Leaves
  • 1 Lemon juiced
  • Black Pepper to taste
  • Kosher Salt to taste

Crispy Shallots:

  • 1.5 cups Shallots sliced
  • 2 cups Canola Oil

Sliders:

  • 1 Slider Roll
  • 8-10 Mozzarella Cheese Slices
  • Melted Butter as needed

Instructions 

Steak and Sauce:

  • In a blender, add all the ingredients for the Marry Me Sauce and blend until roughly chopped.
  • Slather your steaks in oil or my FYR BLK and season generously with my Cowboy Butter Rub.
  • Preheat your grill to high heat (about 400F).
  • Grill up your steaks for about 3-4 minutes per side or until 120F internal for medium rare. Pull off once done to rest, then slice up into bite size slices.

Shallots:

  • Preheat a grill to medium-high heat (about 375F) for two zone indirect cooking.
  • Add a skillet to the grill with 2 cups of oil to 350F. Add the finely sliced shallots and fry for 3-4 minutes or until crispy golden brown. Pull off and let cool once done.

Sliders:

  • While keeping the slider rolls together, slice your slider rolls in half so there is a top side and bottom side. Add the bottom side into a foil bin or cooking safe skillet.
  • Add a layer of cheese, sliced steaks, marry me sauce, crispy shallots and finish with a layer of more sliced cheese plus the top part of the buns.
  • Gently spread melted butter over the top of the assembled rolls.
  • Get your grill to a two zone medium high heat (around 350-375F) for indirect cooking. Add your sliders in the foil bin on to the smoker to cook until they are golden brown & crispy (about 10-12 minutes).
  • Once done, pull the sliders off and let cool for 2-3 minutes.
  • Slice up your sliders and serve with the marry me sauce for dipping. Enjoy!
