This Grilled Cheese BBQ Cheeseburger recipe is inspired by a menu item from Five Guys. You get the best of a grilled cheese and a cheese burger all in one. The crisping of the bun gives a very unique texture that you won’t find anywhere else!

Why You’ll Love Grilled Cheese BBQ Cheeseburger

After seeing this at Five Guys, I had to give it my own spin! This is the best of grilled cheese sandwiches and BBQ bacon cheeseburgers in just a few simple steps. Today we’ll flip the cheeseburger buns so that the toasted side is on the outside.

This makes for a fun and cripsy bite! Pack the burger with bacon and onion rings plus some BBQ sauce and it’s even better!

Grilled Cheese BBQ Cheeseburger Ingredients

We’re going to cook this legendary burger over an open fire for maximum flavor! All you need is some 80/20 ground beef, thick cut bacon slices, American cheese slices, BBQ sauce, burger rub, onion rings, and hamburger buns.

This thing is a monster, but it only takes 30 minutes to prep and 1 hour to cook enough meat for 4 people! Just make sure you eat this hefty meal after your hike, because you’re gonna go into a food coma after you dominate this burger.

How to Make Grilled Cheese BBQ Cheeseburgers

Begin by forming your ground beef into loose 2 oz balls and then place them in the fridge to set until you’re ready to grill. Also, go ahead and slice cheese if you don’t have pre-sliced.

Preheat your fire to medium-high heat (around 375-400F). Add a cast iron skillet or flat skillet oven to the grill over the fire.

First, add your bacon to the skillet and cook until they are done to your liking. Once done, pull them off and set aside. Next, add your burger balls to the skillet, then season them with my Bourbon Prime Rub (or your favorite rub) and let them crisp up for 30 seconds.

Next, place the parchment over one ball and then firmly press with the spatula. Now you have a smashed burger, perfect for our Grilled Cheese BBQ Cheeseburgers. Pull away the parchment paper carefully and move on to the next burger ball. Repeat this for each burger and let cook for another 1-2 minutes.

Carefully flip each burger over and then season the new side with seasoning. Top each burger with a slice of cheese and then let that cheese melt for a couple of minutes. Once melted, place patties in double stacks and pull them off to rest on a paper towel.

Final Steps and Serving Burgers

Next, add the bottom of the burger bun to the skillet face down. Top with a slice of cheese and then a stack of the burger patties. Add your onion rings and bbq sauce to the burger, then place the top bun upside down onto the burger.

Smash everything together and toast the buns for another 15 seconds before flipping. The outside of the bread should become flattened, golden brown, and crispy.

Once the buns are toasted, pull the Grilled Cheese BBQ Cheeseburgers off to cool slightly, then serve and enjoy!

Ingredients 

  • 2-3 lbs Ground Beef 80/20
  • 10-12 Thick Cut Bacon Slices
  • 10-12 American Cheese Slices
  • 1.5 cups of Favorite BBQ Sauce
  • 2 tbsp Bourbon Prime Favorite Burger Rub
  • 10-12 Onion Rings
  • 10-12 Burger Buns

Instructions 

  • Begin by forming your ground beef into loose 2 oz balls and place in the fridge to set until ready to use.
  • Preheat your fire to a medium high temperature (around 375-400F). Add a cast iron skillet or flat skillet oven over the fire.
  • First, add your bacon to the skillet and cook until they are done to your liking. Once done, pull them off and set aside. Next, add your burger balls to the skillet, season with my Bourbon Prime Rub (or your favorite rub) and let crisp up for 30 seconds. Next, place the parchment over one ball and then firmly press with the spatula until the burger is “smashed” on the skillet. Repeat this for each burger and let cook for another 1-2 minutes. Carefully flip each burger over and then season the new side with seasoning. Top each burger with a slice of cheese and let melt for 1-2 minutes. Once melted, double stack your burgers and pull them off to rest.
  • Next, add the bottom of the burger bun to the skillet face down. Top with a slice of cheese and then a double stack of burger patties. Add your onion rings and bbq sauce to the burger, then place the top bun upside down onto the burger. Smash everything together and toast the buns for another 15 seconds before flipping. The buns should become flattened and crispy. Once the buns are toasted, pull the burgers off to cool. Serve and enjoy!
