How to Make Jalapeno Bacon Jam Burgers

Fire up the Grill 

First, I preheat my FYR Grill to medium-high heat, around 350F. Next, I’ll place a cast-iron skillet (plancha) over direct heat a few minutes before cooking starts.

Next up, add your bacon and cook until it’s crispy. Then, pull the bacon out, letting the excess grease drain on a paper towel-lined plate. Crumble the bacon into small pieces after cooling.

The bacon cooks up on the plancha, the cast iron skillet that lays on the FYR Grill.

Next, heat neutral oil in the same skillet with the leftover bacon drippings. Toss in the sliced red onions and jalapeños. Season with a pinch of kosher salt and then cook low and slow over medium heat until the onions are deep brown and caramelized. This takes about 45–60 minutes.

Stir in brown sugar halfway through to deepen the color. When the onions are close to jam-like consistency, go ahead and add your maple syrup and crumbled bacon. Finally, mix everything together and then pull off the heat.

Burger Time

Now it’s time for the bacon jam burgers. First, if you didn’t buy the pre-formed Omaha Steaks patties, divide your meat into equal portions. Lightly season the sides of each patty with kosher salt, black pepper, and garlic powder.

Place a handful of ground beef on the plancha or large nonstick skillet. Top with a sprinkle of diced onion if you like. Cover with parchment paper and smash each ball firmly with a spatula, spreading it out evenly. Cook the first side for about 2–3 minutes until crispy.

Carefully flip each burger patty and season the new side. While each burger cooks, top with a slice of cheddar cheese and let it melt, another 1–2 minutes. Once the melty cheese is perfect, pull the burger patties off and let them rest.

Maple syrup adds the perfect sweet touch to the Bacon Jam Burgers.

Toast your bottom bun and top bun over the flames. Build your burger by stacking a patty (or two), a spoonful of jalapeño bacon jam, and a drizzle of ranch (or more maple syrup!) if you like. Leftover Suggestions & Reheating Instructions

If you have leftover bacon jam, store it in an airtight container in the fridge for up to 3–4 days. Reheat the bacon jam gently over low heat in a large skillet to bring it back to life without burning the sugars.

For leftover burgers, wrap them in foil and toss them on the indirect side of a medium heat grill for 4–6 minutes to warm them up without drying them out. You can also use an air fryer for 5 minutes at 350F for a quick crisp.

Ingredients 

Beef:

  • 6-8 Omaha Steak Smashburger Patties
  • 1.5 tbsp Kosher Salt
  • 1.5 tbsp Black Pepper
  • 1.5 tbsp Garlic Powder
  • Beef Tallow as needed

Jalapeno Bacon Jam:

  • 6-8 slices Bacon crumbled
  • 2 cups Sliced Red Onions
  • 1 medium Jalapeno sliced
  • 2 tbsp Maple Syrup
  • 1.5 tbsp Brown Sugar
  • 2 tbsp Neutral Oil
  • Kosher Salt to taste

Burger:

  • 6-8 Burger Buns
  • 6-8 slices Cheddar Cheese

Instructions 

Jalapeno Bacon Jam:

  • To the skillet with the bacon grease, add your thinly sliced onions and jalapenos. Season the onions with salt and pepper and begin cooking on a medium heat until they are caramelized (dark brown). This should take about 45-60 minutes to achieve.
  • Add brown sugar half way through to deepen the color. When the onions are close to done, add in the maple syrup and crumbled bacon. Mix together and pull off.

Burgers:

  • Grab a pack of Omaha Steaks Smash Patties and open them up.
    If you don't have the premade patties, then grab some ground beef (around 1/4 lbs… ish) and gently roll it into a ball. Repeat this for 6-8 balls or until you’re out of meat. Place them in the fridge until ready to cook.
  • Add a cast iron skillet or plancha over the flames to preheat until it's slightly smoking. Add a burger patty (or ball) to the skillet. Place a piece of parchment over the top and then firmly press with the spatula until the burger is “smashed” on the skillet.
  • Next, season the patty with salt pepper and garlic. Let cook for another 1-2 minutes. Carefully flip the burger patty over and then season the new side with salt, pepper and garlic. Top with a slice of cheese and let melt for 1-2 minutes. Once melted, pull off and rest. Repeat for the rest of your patties.
  • Toast your buns then build your burger with the bun and 1-2 burger patties. Then add the jalapeño bacon jam and an extra drizzle of maple syrup (if you want). Top with the other half of the bun, serve and enjoy!
