I’ve made pizza sausage skewers before, but this was my first time adding hot honey on the recipe. And oh boy, does it take things to the next level. Don’t wait like I did!

Why You’ll Love Hot Honey Pizza Sausage Skewers

These hot honey pizza sausage skewers are a unique way to elevate your pizza game AND your sausage skewers game. Sausages are so easy to cook with skewers, since they thread right on to a two-prong skewer and make it easy to cook a bunch at once.

With Italian sausage skewers as your base for your favorite pizza toppings, you’ll wonder why you ever needed pizza dough. You can use either sweet or hot Italian sausages, depending on how much you like a kick. I’m topping it with pizza sauce, pepperoni and fresh basil, but you can go with whatever toppings you like. It’s your pizza night!

For this recipe, I also stirred chili crisp into the hot honey butter. The crunchy bits and Sichuan peppercorns add au unexpected depth to the pizza. If you want a more traditional hot honey sausage pizza flavor, you can skip the chili crisp, but it really adds something to the recipe. Once you buy a jar of chili crisp, you’ll find yourself adding it to everything.

Hot Honey Pizza Sausage Skewers Ingredients

  • Sausage Pizza: We’ll have Italian sausages as our base, then top with mozzarella cheese, pizza sauce, sliced pepperoni and fresh basil.
  • Hot Honey Butter: To make the hot honey butter, we’ll flavor unsalted butter with local honey, chopped parsley and chili crisp.

Easy Garlic Knots

There’s a style of pizza known as Colorado pizza, which has a super thick crust — with honey baked in! We don’t have dough in this hot honey pizza sausage skewers recipe, but you can make some garlic knots and dip them in the hot honey butter!

Grab a pound of pizza dough balls (either homemade or from the supermarket) and divide it into 16 equal pieces. Roll each piece into a rope about 6-8 inches long, then tie it into a simple knot. Tuck the ends underneath and place on a parchment-lined baking sheet, spacing them about two inches apart. Bake at 400 degrees Fahrenheit for about 15 minutes, until they’re golden brown. 

While those knots are baking, mix together 4 tablespoons melted butter, 3 minced garlic cloves, 2 tablespoons chopped fresh parsley, 2 tablespoons Parmesan cheese, 1/2 teaspoon salt and a pinch of red pepper flakes. Once the knots come out of the oven, brush them generously with the garlic butter mixture while they’re still hot. Serve and enjoy! And plan a trip to Beau Jo’s to try Colorado pizza for yourself.

How to Make Hot Honey Pizza Sausage Skewers

Preheat your grill for medium heat (around 350 degrees F), placing your grill grate (or the spot where you lay your skewers) at least 4 inches away from the heat. It is also helpful to create two three-zone cooking areas so that the skewers lay between two fires instead of directly over the flames.

Begin by carefully skewering 8-10 Italian sausages onto a two-prong skewer or using two single prongs. Add the skewers to the grill for a cook time of about 7-9 minutes per side. Make sure to watch out for flare ups, and pull the sausages off or move the coals around if that becomes a problem.

Once the sausage skewers are close to their final internal temperature (165 degrees F), begin topping them with marinara and mozzarella cheese. Then, top with slices of pepperoni. Once finished, let the sausage cook (ideally covered) for 2-3 more minutes until the cheese melts.

While that’s happening, mix together melted unsalted butter, local honey, chopped parsley and chili crisp. Here’s your hot honey butter!

Once the sausage skewers have reached temp, top them with the hot honey butter. Pull your hot honey pizza sausage skewers off the grill and let them cool for 5 minutes.

Once they’ve rested, slice up your pizza sausages skewers and enjoy! 

What to Serve with Hot Honey Pizza Sausage Skewers

​Leftovers and Reheating

If you’ve got leftover pizza sausage skewers, store in an airtight container in the fridge for up to three days. You can reheat them on the grill at medium heat for 5-10 minutes of cooking or in a cast iron skillet on the stovetop for the same amount of time.

You can store in the hot honey butter in a mason jar in the fridge for up to 1 week. When you’re ready to drizzle over pizza sausage skewers (or whatever your heart desires), warm it gently on low heat over the stovetop until it’s pourable.

How spicy is the hot honey butter, and can I adjust the heat level?

The chili crisp gives the hot honey butter a nice moderate kick that’s balanced out by the sweetness of the honey. If you’re not a heat person, cut the chili crisp down to 1/2 tablespoon or swap it for just a pinch of red pepper flakes. Want more heat? Crank up the chili crisp or add a few dashes of your favorite hot sauce to the butter. Make it your own!

Can I prep these hot honey pizza sausage skewers ahead of time?

You bet! Skewer those raw sausages up to 24 hours in advance and keep them covered in the fridge. The hot honey butter? Make it up to a week ahead and store it in a sealed container in the refrigerator. Just pull the sausages out about 20 minutes before grilling so they can come to room temp, and gently warm up that butter before you baste.

What type of Italian sausage works best for this recipe?

Either sweet or hot Italian sausage works great for the hot honey pizza sausage skewers. Sweet sausage is perfect with the pepperoni and marinara for that classic pizza vibe, while hot sausage brings extra heat that plays beautifully with the hot honey. My recommendation? Red Sausage Pizza:
