Why You’ll Love Hawaiian Chicken Skewers

I love a good all-day grill, like we do in these brisket recipes, but sometimes you just need to make a quick and flavorful dinner. These Hawaiian chicken kabobs are just the ticket. Once you’re done marinating the chicken pieces, the recipe comes together so fast.

Hawaiian Chicken Skewers Ingredients

​Our ingredient list is super simple! 

  • Chicken: For this Hawaiian chicken kebabs recipe, we’re using skinless chicken breasts, then seasoning with my Tiki Tiki BBQ Sauce and Big Bad BBQ Ale Rub
  • Skewers: ​To finish our Hawaiian chicken skewers, we’ll use more Tiki Tiki BBQ Sauce as a glaze for extra flavor. Then, we’ll garnish with sesame seeds, sliced scallions and my FYR GLD Hot Sauce

Grilled Fresh Pineapple

Fresh pineapple is hands-down one of the best fruits to throw on the grill (don’t worry, peaches, I see you too). The heat from the grill caramelizes the juicy pineapple’s natural sugars, so you get more concentrated pineapple flavor and that smokiness we all love. You can cut it into cubes and place it on skewers, but my favorite way to grill pineapple is in rings.

This one-minute video from the Food Busker is a great step-by-step tutorial on how to cut, peel and core a whole pineapple. Once you’ve sliced up your fresh pineapple, toss it with a few tablespoons of olive oil or vegetable oil, a squirt of honey, a dash of hot sauce and a little bit of kosher salt to taste. Then, grill for about 3 minutes per side over high heat. Serve with these Hawaiian chicken skewers and enjoy a taste of paradise!

How to Make Hawaiian Chicken Skewers

First, cube 3 pounds of skinless chicken breast. Because we want these chicken pieces to grill evenly, try to cut each piece of chicken as uniformly as possible. Then, add to a food safe bowl or resealable bag with 2 cups of Tiki Tiki BBQ sauce — no need for extra marinade ingredients here! Let the chicken marinate for at least 2-4 hours, but ideally overnight.

When you’re ready to grill, remove the chicken from the marinade. Discard the remaining marinade, then slide the chicken pieces onto your skewers. Finally, season the outside of the marinated chicken with Big Bad BBQ Ale (as needed) and set to the side.

Next, preheat your grill to medium-high heat (about 325 degrees Fahrenheit). Then, place chicken skewers on the grill grate to cook slowly.

You’ll also want to baste these Hawaiian chicken skewers with more Tiki Tiki BBQ Sauce as needed. Do this until they reach an internal temperature of 165 degrees F. Use an instant-read thermometer to check! Once the Hawaiian chicken skewers have finished cooking, pull them off and let them rest for five minutes.

Garnish the chicken skewers with sesame seeds, sliced scallions and FYR GLD. Serve and enjoy!

​What to Serve with Hawaiian Chicken Skewers

If you want to stay on the skewers theme, then skewered bell peppers or other veggies are a great option. You could go with red bell pepper or green bell pepper, and even some red onion. Also, grilled pineapple chunks are off the charts. Then, round it out with a side of white rice or coconut rice.  Drizzle more Tiki Tiki BBQ Sauce on everything for a freakin’ delicious meal.

​Leftovers and Reheating

If you have leftover skewers, store in an airtight container in the fridge for up to three days. To reheat, you can toss the juicy chicken pieces in a pan on the stove or on the grill over medium heat.

​Can I use something besides skinless chicken breasts? 

Definitely! Boneless skinless chicken thighs are a great option for Hawaiian chicken skewers. You’ll just want to make sure you’re cutting them in uniform pieces so they grill unevenly. And like I said before, Tiki Tiki works with basically any meat! Try this recipe with pork, seafood or beef.

Should I use metal skewers or wooden skewers? 

I recommend metal skewers for a few reasons. First off, you can reuse them. Also, the flat surface you get with metal skewers makes the food more stable so it doesn’t rotate or slide while you’re grilling. But some cooks say the metal heats up faster than a wooden skewer and cooks the inside of the meat too quickly. I haven’t found this! But if you want to go with wood skewers or bamboo skewers, make sure you get products with a smooth finish so they’re less likely to splinter. Soaking them in water helps with splintering and charring issues too.
