Chicken Pizza Parmesan: the two best dishes you can find at your go-to red sauce Italian restaurant, mashed together into one freakin’ delicious recipe. There’s nothing too fancy here! I basically took my favorite pizza ingredients, put them on top of chicken parm and cooked the whole thing over the fire.

With breaded chicken, pepperoni, pizza sauce and melty cheese, how could this dish NOT be a guaranteed crowd pleaser? It’s a super fun, great recipe to make for your whole family for a new spin on pizza night, or even a date night dinner in.

Why You’ll Love Chicken Pizza Parmesan

If you’ve been here for a while, you know I like to pizza-fy (if that’s not a word, I’m starting the trend now!) some of my favorite grill ingredients. Sausages (don’t miss the hot honey version either!), cheesesteak, steak and smashburgers have all gotten the pizza treatment. It was only a matter of time before chicken Parmesan made the list!

I went classic with this Chicken Pizza Parmesan preparation, with Italian breadcrumbs and Parmesan cheese for the chicken coating and pepperoni, mozzarella and tomato sauce for the pizza toppings. I also used olive oil for the frying step. If you want to use a different neutral oil for frying, go for it! I just felt that olive oil was the most traditional.

You could even grab some different toppings, like sausage or olives, if you don’t feel like using pepperoni. I also made some rigatoni with Alfredo sauce on the size, which really leveled up the whole dish. Chicken Pizza Parmesan Ingredients

  • Chicken: You’ll need chicken breasts, filleted and pounded thin, plus Salt Pepper Garlic Seasoning, Italian breadcrumbs for a sturdy crust, grated Parmesan cheese, eggs and flour. 
  • Pizza: The Parmesan pizza portion! Grab some sliced pepperoni, a jar of marinara sauce, mozzarella cheese, olive oil and fresh basil for garnish.

Easy Homemade Alfredo Sauce

If you’re feeling ambitious and want to make your own Alfredo sauce, here’s an easy way to throw it together. For a pound of pasta, place 1/2 cup of room temperature butter into the middle of a pasta serving plate/bowl and flatten it. Then, top with the warm cooked pasta and mix around in the butter. Add 1/2 cup grated Romano cheese and 1/2 cup of grated Parmesan cheese, along with 2 ounces of pasta water. Mix together until silky and creamy, and season to taste with salt and pepper. I use this method in my steak and shrimp Alfredo and it’s so freakin’ delicious!

How to Make Chicken Pizza Parmesan 

Let’s make this chicken parm pizza recipe, shall we?!

Grab your three chicken breasts and start by flaying each chicken breast in half to make them larger, pounding the pieces thin to ½” thick. Then, season generously with 2 tablespoons SPG.

Dredge each of the chicken cutlets in flour, dip in whipped eggs, then coat in a mixture of breadcrumbs and Parmesan. You’ll need 1/2 cup flour, 2 eggs, 2.5 cups Italian breadcrumbs and 1/2 cup grated Parmesan cheese for all your chicken breasts.

Next, build a medium-high heat fire (about 350 degrees Fahrenheit). Place a cast iron skillet on the grill grates. Add ½” of olive oil to the skillet to heat up.

Place the breaded chicken breasts in the skillet and cook 4-6 min per side until your flavorful crust is golden brown and the internal temperature reaches 165 degrees F. Move to indirect heat if needed to finish cooking.

Once that crispy chicken reaches temp, remove from heat.

For the pizza toppings, pour your 1 cup pizza sauce into a large skillet and top with 4 ounces mozzarella cheese and 1 cup sliced pepperoni. Broil in your oven until the cheese is bubbling, melted and speckled brown.

Serve the chicken Parmesan on a plate and pour the melty mozzarella and sauce over the top. Garnish with fresh basil and extra Parmesan. Serve with pasta on the side and enjoy!

​What to Serve with Chicken Pizza Parmesan

The pasta is a classic chicken Parmesan side. But, if you want something different, a loaf of garlic bread or other crusty Italian bread would be perfect here. I also love this with sauteed broccoli rabe, grilled asparagus or zucchini, roasted broccoli, Caesar salad or a simple garden salad. 

Leftovers and Reheating

If you’ve got leftover chicken pizza Parmesan, store in an airtight container in the fridge for up to three days. To keep the crust nice and crispy, reheat in a cast iron skillet in your oven, air fryer or on the grill at about 350 degrees F for 5-10 minutes. I’d stay away from the microwave, since that beautiful crust will get soggy!

FAQs

Can I bake the chicken pizza Parmesan instead of frying it in oil? 

Yep! Bake the breaded cutlets on a wire rack over a baking sheet pan at 400 degrees F for about 20-25 minutes, flipping halfway. The crust will be a little less crispy, but you’ll have a lighter dish with still great flavor.

Can I use a different cut of chicken? 

Sure! Go ahead and use boneless, skinless chicken thighs if you don’t want to use chicken breasts. You could also buy pre-cut chicken cutlets and pound those thin, if you want to skip the flaying step. 

Should I grate my own Parmesan or get the pre-shredded stuff from the store? 

Definitely grate your own. The stuff at the typically has an anti-caking agent, so it might not melt as well and stick to the chicken pizza Parmesan the way we want. Freshly grated Parmesan melts smoothly, has a superior texture and keeps its intense, nutty flavor throughout the cooking process.
