This epic recipe came to me while Go RVing in the breathtaking Pacific Northwest with my wife. That’s when a massive craving for Buffalo chicken hit me.

Now, we all know that Buffalo sauce and traditional chicken wings are a heavenly match, but meatier chicken legs are my idea of a great meal. Especially when you factor in the blue cheese sauce that cools off the insanely good Buffalo chipotle flavors.

Ingredients for my Buffalo Chicken Drumstick Recipe

  • Buffalo Chicken Legs – Juicy and meaty chicken legs from the grocery store are the star of this dish, providing the perfect canvas for my flavorful Chipotle Garlic Rub, held onto the chicken skin by some canola oil.  
  • Homemade Buffalo Sauce – Unsalted butter, heavy cream, Buffalo sauce, and some honey create the creamy spicy sauce that covers the chicken legs before the final blast of heat. 
  • Blue Cheese Sauce – This simple but oh-so-tasty sauce comes together quickly with more melted butter, heavy cream, and blue cheese crumbles.

If you’re unsure about the Chipotle and Buffalo flavors getting along in the Buffalo Chicken Legs recipe, it’s a valid concern! But once that rich and deep flavor combo hits the bleu cheese dipping sauce, you’ll know why it’s a game-changer. It’s the perfect balance of all that you love about Buffalo wings and chipotle seasoning. 

How to Make Buffalo Chicken Legs

Alright, let’s get some direct heat going to make our Buffalo Chicken Legs! Grab your fire starter and some wood. We want the fire to be at a medium heat, so adjust accordingly. Once the fire’s going nicely, place your grill right over it.

Now, let’s focus on the chicken. After rinsing, pat drumsticks dry with paper towels. In a large bowl, place chicken legs and add some oil and my Chipotle Garlic Rub. Give it a good mix, and then set it aside.

Sauce Time

Next up, we’re going to carefully make our sauces to go with our Buffalo Chicken Legs. In one cast iron skillet, melt 2 tablespoons of butter, pour in 1/2 cup of heavy cream, some buffalo sauce, and a touch of honey. Stir it all up over the fire, keeping it at medium to low heat, for about 3 to 4 minutes. Once it’s done, set it aside.

While that’s cooking, in another skillet, melt another 2 tablespoons of butter, pour in another 1/2 cup of heavy cream, and toss in the bleu cheese crumbles. Keep stirring it over the fire, again at medium-low heat for around 8 to 10 minutes, until the cheese is all melted and gooey. Once it’s melted, remove it from the heat and let it cool down.

Buffalo Chicken Legs Grilling Time

Now, while those sauces are resting on the cooler side of the grill, it’s time to get those Buffalo Chicken Legs on the grill. Cook them for about 8 minutes on each side or until they reach an internal temperature of 165° degrees F. Once they’re done, take them off the grill and pop them into a pan.

Now, pour that delicious buffalo sauce all over the chicken and give it a good mix. Then, move the legs back onto the grill for just a minute on each side to get a nice sear.

Finally, let’s get that bleu cheese dipping sauce ready in a bowl. Dip your Buffalo Chicken Legs in there, and take in all the amazing flavors. Enjoy your tasty campfire meal!

Absolutely! While this recipe was inspired by my love of chicken legs, you can easily swap in chicken wings. Just adjust the cooking time accordingly.

Buffalo Chicken Legs

Ingredients 

Chipotle Garlic Buffalo Chicken Legs Ingredients:

Campfire Buffalo Sauce

  • 4 tbsp of Butter split into two 2 tbsp
  • 1/2 cup of Heavy Cream
  • 1/2 cup of Buffalo Sauce
  • 1 tbsp of Honey

Bleu Cheese Sauce

  • 2 tbsp of Butter
  • 1/2 cup of Heavy Cream
  • 1/2 cup of Bleu Cheese Crumbles

Instructions 

  • Using a fire starter and some local wood, start your fire. Make fire a medium heat. Place your grill directly over fire and preheat 2 skillets.
  • In a pan, add your chicken legs with some oil and Chipotle Garlic Rub. Mix thoroughly and set aside.
  • In your first skillet, add 2 tbsp of butter, 1/2 cup of heavy cream, buffalo sauce and honey. Stir frequently over medium to low heat fire for 3-4 minutes. Then set aside.
  • While cooking the buffalo sauce, add to other skillet 2 tbsp of butter, 1/2 cup of heavy cream, and all the bleu cheese crumbles.
  • Cook over medium-low fire stirring frequently for 8-10 minutes until cheese is fully melted, then pull off and set aside to cool.
  • While both sauces are cooking, add chicken wings too grill and cook for about 8 minutes per side or until they reach 165 degrees F internal.
  • Pull off the grill and set in pan. Add buffalo sauce over chicken and mix thoroughly.
  • Add chicken back to grill to sear for only 1 minute per side. Pull off when done.
  • In a bowl, add the bleu cheese dipping sauce. Dip chicken in sauce and enjoy!
