Cookie Butter & Chipotle Coffee Rub
In a small bowl, combine crumbled cookies with softened butter, soy sauce, and spices. It’s important that the butter is softened (so that you can easily mix it), but also not melted. If it’s melted we won’t be able to roll it into a log. Mix until smooth.
Now that the butter mixture is put together, let’s roll it. Set some plastic wrap across a flat surface, then set the butter mixture in the middle of the plastic wrap. Take the long sides of the plastic and wrap it to cover the butter, leaving the ends out so that you can grab them. Take those ends and begin to twist them, so that plastic wrap gets tighter and tighter around the butter. Once everything is secure, set the butter log in the fridge to solidify.
Prep the Crusted Steak
Next, mix together the Chipotle coffee rub ingredients in a small bowl.
Pat your ribeye steaks dry with paper towels and slather them in oil. This will help us achieve a good crust on the steaks when grilling. Generously apply the homemade coffee rub, making sure every inch of the meat gets coated. Let the seasoned steaks rest in the fridge while you heat your grill.
